“Il Matto delle Giuncaie” is the Sangiovese in purity by Fattoria Dianella. It is a wine with an original character. A wine that will reward the waiting, it gives its best only at the end of the tasting, when it reveals its tannins and its great complexity and personality. It is perfect served with game birds, aged cheese and grilled meats.Manual harvesting and selection of grapes. Winery location: selection of the Madonnina vineyard, unique cru, 200 a.s.l, south exposure, the ancient vineyard of the farm. The plants are placed in the highest part of the estate, where the terroir has a higher content of limestone. Spur cordon. Vinification: in stainless steel tanks. The fermentation temperature is con- trolled. The duration of maceration on the skins is 20 days. The malolactic fermentation is in tonneaux. Aging: 12-16 months in little French oak barrels of 225 litres of second and third passage and at least 6 months in bottle. Color: deep purple red. Bouquet: deep tobacco and liquorice notes well melted with red and black fruits and vanilla flavours. Taste: it is full and strong, its good structure and sweet tannins make it elegant and fine. It is long and has a sweet finish.
